Irish Brown Bread
My mum's recipe.
Every Irish family has their own brown bread recipe, and this is ours.
My mum has been making this for as long as I can remember. She still bakes several loaves every week, even though it’s only her and Dad at home now. I’m not sure if they eat anything other than this bread, to be honest.
Irish Brown Bread
Note: All dry ingredients must add up to 500g 🚨
Ingredients
400g Odlums Hearts Delight Wheatmeal
1 heaped teaspoon bread soda
40g wheat germ
20g oats
40g mix-ins: seeds, nuts
1 teaspoon salt
500ml milk with the juice of half a lemon stirred in
Method
Preheat the oven to 190°C and line a 2lb loaf tin.
Stir the dry ingredients together.
Pour in the milk to make a sloppy consistency as shown in the video. If it’s stiff, add more milk.
Pour the mixture into the tin. Top with seeds, if you wish.
Bake for 1 hour. Remove the bread from the tin straight away, and leave to cool on a wire rack.
